OK, here’s a healthier version to try!

Preparation Time – 10mins

Cooking Time – 1 ¾ hours)

Ingredients

1 tbsp ghee

1kg lean braising steak, cut into 1inch cubes

1 onion, chopped finely

3 garlic gloves

1 inch ginger root, grated

4 fresh red chillies

4 green cardamom pods

4 cloves

2 tsp coriander seeds

2 tsp cumin seeds

1tsp paprika

1 tsp salt

1 bay leaf

125ml low-fat yoghurt

1 inch cinnamon stick

150ml hot water

¼ tsp garam masala

  1. Heat the ghee in a large flameproof casserole and brown the meat in batches. Remove the meat and place in a bowl.
  2. Add the chopped onion to the ghee and stir over a high heat for 3-4mins
  3. Grind together the garlic, ginger, chillies, cardamom, cloves, coriander, cumin, paprika, and salt. Add the spice paste and bay leaf to the casserole.
  4. Return the meat and any juices in the bowl to the casserole and simmer for 2-3 mins. Gradually stir the yoghurt into the casserole keeping the sauce simmering.
  5. Stir in the cinnamon stick and hot water and pepper to taste.

Cover the casserole and cook in a preheated oven 180degs C, for 1 ¼ hours until the meat is tender and the sauce is slightly reduced. Discard the cinnamon stick and stir in the garam masala. Remove surplus oil from the surface before serving.
